1 head cabbage
2-3 cloves garlic
1 cup chopped carrots
1/2 cup chopped onion
1/2 cup chopped celery
1 tablespoon olive oil
8 cups chicken broth or use bullion and water
1 tablespoon tomato paste
1 cup green beans (optional)
1 cup diced zucchini (optional)
1/2 teaspoon Italian seasoning (more if you like)

Directions:
Directions:
In a large pot pour olive oil and begin to sauté the onion and garlic.
Once translucent add carrots and celery and cook for several minutes to soften.
Pour in chicken broth and deglaze the pan, add in tomato paste.
Wisk in until incorporated.
Add chopped cabbage, green beans and zucchini.
Add spice and you can play with spiced to get the taste you desire.
Bring to a boil then reduce heat and simmer for several hours.
The broth will become darker and the cabbage soft .
The soup is ready.
