4 Teaspoons of vegetable oil
3 Eggs, beaten
1 Medium head of cabbage, finely shredded
1 Carrot, thinly sliced
1 (8 ounce) Can of bamboo shouts
1 Cup of mushrooms, finely chopped
2 Green onions, thinly sliced
2 1/4 Teaspoons of Soy sauce
1 Teaspoon of Pepper
½ Teaspoon of Salt
1 Teaspoon of White Sugar
1 (14 ounce) Package of egg roll wrappers
1 Egg white, beaten
1 Pound of roasted Pork (can substitute Beef, Chicken, or Shrimp), diced
4 Cups of Peanut oil for frying (or as needed)

Heat 1 teaspoon of vegetable oil in wok or large skillet over medium-high heat. Pour in eggs and cook without stirring (until firm). Flip eggs over and cook for 30 seconds. Set egg aside to cool, then cut into strips.

Heat remaining vegetable oil on high heat. Stir in Cabbage and carrot; cook for 2 minutes (until wilted). Add bamboo shoots, mushroom, pork (or other meat), green onions, soy sauce, pepper and salt, and white sugar, continue cooking until vegetable soften (about 5 to 6 minutes). Stir in egg. Spread mixture into a bowl and refrigerate until cold (at least 1 hour).

To assemble the egg rolls, place a wrapper on counter with one corner pointing towards you. Place 2-3 tablespoons of cooled filling in a mound on the bottom third of the wrapper, then brush some of the egg white mixture on the top 2 edges. Fold the bottom corner over the filling and roll firmly to the halfway point. Fold left and right sides tightly over egg roll and continue rolling to the top. Seal the egg roll with egg white mixture. Repeat with remaining egg rolls, cover finished egg rolls with plastic wrap to keep from getting dried out.

In about 6 inches of oil in a wok or deep fryer to 350 F. Fry egg rolls 3 or 4 at a time until golden brown (about 5 to 7 minutes). Drain on paper towels. Serve with favorite sauce or sweet and sour sauce.
