4 medium-large firm tomatoes (not Roma)
1 c. shredded Parmesan cheese or Italian blend cheese
1 c. Panko bread crumbs
1 tsp. Italian seasoning
1 tsp. dried basil
1 T. olive oil
1/2 tsp. salt
1/2 tsp. ground black pepper

Directions:
Directions:
Preheat oven to 350ºF. Cut off tops of tomatoes and scoop out center pulp. Reserve and mash pulp. In a medium bowl, mix together the reserved pulp with the Panko bread crumbs, 1/2 cup of shredded cheese, seasonings, olive oil and salt and pepper. Spoon mixture into tomatoes and top with remaining cheese. Arrange tomatoes in a baking dish and bake 15 minutes. Change setting to broil and broil until the cheese is light brown and bubbly - approximately 5 minutes. Serves 4.
