Ingredients: 1 box chocolate cake mix 4 eggs 2 T. mayonnaise ¼ c. strong coffee (cooled) 1 c. milk ½ c. melted butter (cooled) ½ tsp. vanilla

Directions: |
Directions:Preheat oven to 350º F. Add all ingredients to mixing bowl and beat on medium speed for 2 minutes. Pour into 8 or 9 inch cake pans, lightly sprayed with baking spray, and bake for about 30 minutes or until toothpick inserted in center of cake comes out clean. Cool for 5 or 10 minutes before removing from pan, then cool completely before frosting. |

Ingredients: |
Ingredients: 4 c. powdered sugar (1 lb.) 1 c. butter at room temperature 1/3 c. heavy whipping cream 1/4 tsp. almond extract 2 tsp. vanilla

Directions: |
Directions:Add all frosting ingredients to mixing bowl and mix on low until it starts to come together. Increase speed to high and beat for 4 minutes until light and fluffy, scraping bowl sides a couple of times.
Frosting can be made one day ahead and stored at room temperature, or for up to 2 weeks in the fridge. |

Notes: This is Cindy's favorite birthday cake! Adding cream to the frosting makes it lighter than regular buttercream. The coffee in the cake pops out the chocolate flavor and the mayo makes it extra moist.
