Garlic Butter Shrimp with Asparagus Recipe

1½ lb raw peeled and deveined shrimp (with or without tails)
1½ lb asparagus (1 bunch) rinsed and trimmed
3 T butter
1 T evoo
1 tsp minced garlic
1 tsp Italian seasoning
2 tsp onion powder
Salt & pepper to taste
¼ cup vegetable stock
1 T hot sauce (Sriracha or any you like)
Sprinkle of crushed chili pepper flakes (optional)
Juice of ½ lemon
Fresh chopped parsley or cilantro for garnish

Using large non-stick skillet place 1 T evoo and 1 T butter over medium heat. Add asparagus and season to taste. Sauce until crisp tender, 4-6 minutes. Remove from pan and set aside.

In the same pan add the remaining 2 T butter and add the shrimp. Season with salt/pepper and fry 1-2 minutes.

Add minced garlic, Italian seasoning and onion powder. Stir to combine and flip the shrimp to cook to the opposite side. Cook 1 minute and add the stock, making sure not to overcook the shrimp..

Push the cooked shrimp to the side and add the asparagus back to the pan. Stir asparagus to coat with sauce. Squeeze half of lemon over top of both.
Allow reheating for 1-2 minutes. Remove pan from heat and garnish with parsley, lemon slices and crushed red pepper if you like.

This is really good and a recipe from Donna. If you are feeding an extra hungry group,
serve with wild rice or cauliflower rice. A cast iron skillet works well for this.
