1 ½ Cups of Vegetable broth
1 Tablespoon of Margarine
1 Cup of uncooked White rice
1 Tablespoon of Sesame seeds
2 Tablespoons of Peanut oil
2 Teaspoons of Ginger root, minced
1 Teaspoon of Garlic, minced
½ Pound of Asparagus, trimmed, and cut into 1-inch pieces
1 Red Bell pepper, cut into 1-inch pieces
3 Green onions, diced
2 Cups of Mushrooms, sliced
3 Tablespoons of Soy sauce
1 Tablespoon of Sesame oil

Preheat oven to 350 F

In a saucepan, combine broth, margarine, and rice. Cover and bring to a boil or high heat. Reduce heat to low, and simmer for 15 minutes, or until all liquid is absorbed.

Take a small baking sheet, spread out sesame seeds, and bake in preheated oven for 5 to 6 minutes (or until golden brown). Set aside.

In a large skillet/wok, heat oil over medium-high heat. Add ginger and garlic, cook for 30 seconds to release aroma, then add asparagus, bell pepper, onion, mushrooms, and stir fry for 4 to 5 minutes (or until vegetables are tender, but crisp). Stir in soy sauce and cook for 30 seconds. Remove from heat and stir in sesame oil and roasted sesame seeds.
