2 Cups of Shrimp, peeled
2 Tablespoons of peanut oil
1 Red pepper, sliced
1 Teaspoon of Garlic, minced
1 Teaspoon of Ginger root, freshly grated
2 Green Onions, sliced
2 dashes of Black pepper
1 dash of Salt
¾ Cup of celery, chopped
1 Carrot, cut into thin strips
¾ Cup of Sliced Mushrooms
¾ Cup of diagonally sliced bamboo shoots
½ Cup of Water Chestnuts
1 Tablespoon of Soy sauce
1 ½ Tablespoons of Soy sauce
2 Teaspoons of White sugar
2 Teaspoons of Vinegar
1 Teaspoon of Sesame oil
1 Tablespoon of Vegetable stock or water
1 ½ Teaspoons of cornstarch
4 Cups of cooked rice, or chow mein noodles

Directions:
Directions:
Whisk soy sauce, sugar, vinegar, sesame oil, vegetable stock/water, and cornstarch together in small bowl, until smooth.

In a large skillet or wok, heat peanut oil on medium-high heat, add shrimp and cook for 1 to 3 minutes (until pink), and then remove and keep warm. Add red pepper, garlic, and ginger, cook for 2 minutes. Then add green onions, pepper, salt, celery, carrot, mushrooms, bamboo shoots, and soy sauce, cook for 4-6 minutes (until vegetable are tender, yet slightly crisp). Return shrimp to pan/wok, mix well, and remove from heat.

Serve over cooked rice or chow mein noodles. You can add other vegetable as desired, but additional cooking time may be needed.
