2 tbl coconut oil
2 cups chicken broth
1 cup quinoa
1 large yellow onion, peeled and diced small
2 tbl lemon juice
1 tsp salt
1/2 tsp pepper
1/2 cup sun-dried tomatoes, sliced thinly
1/2 cup chopped parsley
1/2 cup sliced almonds

Directions:
Directions:
Add the quinoa, onion, coconut oil and chicken broth to sauce pan. Bring to boil and cook for 15 minutes. Drain. Add the sun-dried tomatoes, parsley and almonds, stir to combine, warm for 5 minutes. Add the lemon juice, salt and pepper. Transfer quinoa to a large bowl and serve warm.
