1½ cups all-purpose flour
2 T. granulated sugar
1 T. baking powder
½ tsp. salt
½ tsp. cinnamon
1 cup milk
1 large egg. separated
2 T. oil
½ tsp. vanilla extract
2 very ripe bananas mashed (about 1 cup)

Preheat an electric griddles to 350º. Whisk the flour, sugar, baking powder, salt and cinnamon in a large bowl. Whisk, milk, egg yolk, oil and vanilla in a large measuring cup. Add wet ingredients to dry ingredients. Whip the egg white until stiff. Add the bananas and the egg white and stir just until combines. Cook on prepared griddle using either oil or butter. Cook until small bubbles form then flip until bottom is a light golden brown. Serve with syrup.
