3 c flour
1 T plus 2 tsp pumpkin pie spice
2 tsp baking soda
1 1/2 tsp salt
3 c sugar
1 - 15 oz can pumpkin
4 large eggs
1 c canola oil
1/2 c orange juice or water
1 c sweetened, dried, fresh or frozen cranberries

Directions:

Preheat given to 350º. Grease and flour; two 9x5 loaf pans.

In a large bowl; combine flour, pumpkin pie spice, baking soda, and salt in a large bowl. Combine sugar, pumpkins, eggs, canola oil and orange juice. Beat until just blended. Add pumpkin mixture to flour mixture; stir until just moistened. Fold in cranberries.

Spoon into prepared pans. Bake for 60-65 minutes or until toothpick comes out clean. Cool pans on wire rack for 10 minutes; remove from pans, to wire racks; cool completely .

For a 5 x 3 inch loaf pan bake 50-55 minutes.

Options:
Add chocolate chips and nuts, both work well.
