1 glove garlic
6 large, ripe tomatoes-seeded, peeled and finely chopped
2 cucumbers-seeded, peeled and finely chopped
½ c. each of finely chopped red and green peppers
½ c. finely chopped onions
2 c. tomato juice or V8
⅓ c. olive oil
3 TBSP lemon juice
salt and pepper to taste
Tabasco sauce if desired
Fresh parsley

Directions:

Rub a large glass bowl with a cut garlic clove and add the tomatoes, cucumbers, onion and peppers. Mix the tomato juice, oil and lemon juice. Pour over the vegetables and season with salt, pepper and Tabasco to taste. Chill thoroughly. Serve in chilled bowls with fresh parsley sprinkled on top.
