2 lbs. Rabbit
5 slices thick cut bacon, diced
1 med. onion, diced
2 T. flour
2 c. water
1/2 c. red wine
salt and pepper to taste
dash of sugar

Directions:
Directions:
Wash rabbit and cut into one inch cubes. Fry bacon in large heavy Dutch oven or skillet. Add diced onion and the rabbit and cook until brown on all sides. Sprinkle flour over the mixture and sauté another minute. Add water and cook, stirring until thickened. Season with salt and pepper; cover and cook slowly for 1 1/2 hours. Just before serving add the red wine and dash of sugar. Serves 4.
