Ingredients: 3 eggs 1 c. sugar 2/3 c. canned pumpkin 2 tsp. cinammon 1 tsp. baking powder 1 tsp. soda 1/2 tsp. salt 3/4 c. flour Filling:
1 (8oz) cream cheese 2 Tbsp. butter 1-2 c. powder sugar** 1/2 tsp. vanilla

Directions:Mix all ingredients- Spray jelly roll pan with non stick spray Place wax paper on pan and spray on top of wax paper again. Pour ingredients into pan and spread evenly. Bake at 375º for 15 minutes. When cooked turn the cake on to a well powdered sugar towel. Remove wax paper from the cake. Immediately roll towel and all. Cool completely on rack about 30 minutes. Unroll and spread with filling. *Adjust powder sugar depending on how thick you what the filling. Re-roll and refriedgate before cutting. Can be wrapped in foil and frozen for 1 month. |

Notes: I like to double the recipe. This recipe takes a little tending but the out come is sure good. I make this for the holidays and it has been a good success, people love it.
