2 pints of cherry tomatoes
Sausage cut into slices (any sausage would work but the kids prefer the smoked kielbasa type)
4 smashed garlic cloves
1 onion cut into strips or wedges
Olive Oil
1 tbs balsamic vinegar (or more to taste, I just eye ball it)
Fresh herbs (rosemary and thyme) or dried Herb de Provence mix works
1 can cannellini beans rinsed
White wine

Directions:
Directions:
1) Preheat oven to 425

2) Place tomatoes, garlic, onion and sausage scattered on baking sheet

3) Drizzle with olive oil and balsamic vinegar

4) Toss with herbs and some salt and pepper

5) Bake for 25-30 min until sausages are golden and tomatoes start to pop

6) If you would like it to be more saucy, add some white wine, reduce heat to 350 and
cook for an additional 20 min.
