3 lb yellow squash
1 large onion dices
1 can of cream of chicken (or mushroom) soup 1 cup mayo
1 egg
8 oz shredded cheddar
1 tsp salt
1⁄2 tsp pepper
1 cup panko bread crumbs
1⁄2 stick melted butter

Directions:
Directions:
1) Wash and slice squash into small medallions.

2) In a large bowl, mix soup, may, eggs, cheese, onion, salt and pepper.

3) Mix in squash and pour into a casserole dish.

4) Mix panko with melted butter and sprinkle over top (you can make more topping if you’d like).

5) Bake at 350 degrees for 30 min covered and then an additional 15-20 min uncovered until squash is tender.
