3 Russet potatoes
¼ cup green peppers, chopped
¼ cup red peppers, chopped
¼ cup onions, chopped
2 cloves garlic, chopped
1 tsp. paprika
salt and pepper to taste
2 tsp. olive oil

Directions:
Directions:
Grate the potatoes using the larges hole of cheese grater. Place the potatoes in a bowl of cold water. Allow the potatoes to soak for 20-25 minutes. Drain the water from the potatoes and dry them completely using a paper towel. Place the potatoes in a dry bowl. Add the garlic, paprika, olive oil, salt and pepper. Stir to combine the ingredients. Add the potatoes to the air fryer sprayed with oil. Cook for ten minutes at 400º. Open the air fryer and shake the potatoes. Add the chopped peppers and onions. Cook for an additional ten minutes.
