4 scallions
4 T mayonnaise
4 tsp honey
2 tsp Sriracha
20 oz ground beef
1 thumb ginger, about 1-2 tsp, grated and peeled
4 T sour cream
4 T soy sauce
1 c jasmine rice
1/2 c panic bread crumbs
1 tsp Korean Chili flakes

Preheat oven to 425º. Adjust rack to top position of the oven.

Trim scallions and thinly slice, separating the white part from the green; mince whites. Peel the ginger and grate and mince.

In a large bowl; combine mayonnaise, sour cream, honey, 4 tsp soy sauce and sriracha to taste. Set aside.

Cook rice in rice cooker or on the stove with 3/4 cup water and pinch of salt. Bring to a boil, then cover and reduce heat to low and simmer. Cook rice until tender and water is absorbed; 15-18 minutes. Keep covered and off heat until ready to use.


While rice cooks, in another large bowl combine, beef, panko, ginger, scallion whites, remaining soy sauce, salt and pepper. Form into meat balls; about 20-24, 1 1/2 inches wide.

Place meatballs on a lightly oiled baking sheet. Roast meatballs on top rack for 14-16 minutes.

Fluff rice with a fork; season with salt and pepper. Line bottom of a serving bowl with rice, add meatballs with sauce and toss to coat. Drizzling with any remaining sauce and Chile flakes to taste.
