2 Tbsp olive oil
1 lb chicken breast, cut into chunks
1 pkg Original Ranch dressing mix
1 (8-oz) pkg cream cheese, softened
1 cup basmati rice
2 Cups chicken broth
12 ounce frozen broccoli
2 Cups shredded cheddar cheese
1/2 Cup cooked chopped bacon

Directions:
Directions:
Turn on the “Sauté” setting on the Instant Pot. Once preheated add oil, chicken, and ranch packet, and stir to completely coat the chicken. Cook chicken for 2–3 minutes. Scrape any bits off the bottom of your pot.
break up the cream cheese on top of the chicken (don’t stir anything).
After the cream cheese, sprinkle a cup of rice evenly on top (I used basmati).
Then pour 2 cups of chicken broth over top.
Then add your broccoli on top last. Still DONT MIX ANYTHING. I used a 12 oz bag of fresh broccoli.
Close lid. Cook on HP 4 minutes.
Do a QR when done. Then add your bacon and cheese (as per the original recipe) and stir.
