Butter - 250g
Vanilla extract - 1tsp
Caster sugar - 165g
Brown sugar - 165g
Egg - 1
Plain flour - 315g
Cocoa powder - 25g
Bicarbonate of soda - 1tsp
Dark chocolate - 400g

For candied chillies
Caster sugar - 55g
Water - 60ml
Red Chillies - 3

Directions:
Directions:
Preheat the oven to 160º fan and line baking trays
Prepare candied chillies
Beat the butter, sugar, vanilla extract and egg in a large bowl until light and fluffy
Stir in sifted flour, cocoa powder and bicarb in two batches
Stir in chillies and chocolate
Roll tablespoon-sized pieces of dough into balls and place on the baking tray
Bake for 15 minutes
Leave to cool on trays for 10-15 minutes, then transfer to a cooling rack to cool completely

To make candies chillies
Stir the sugar and water in a small saucepan over low heat until the sugar dissolves
Add the chillies and boil for 2 minutes
Cool, strain and discard the syrup
