2 c salad shrimp
4 hard-boiled eggs, peeled
1/4 tsp salt
1/8 tsp pepper
1/4 tsp dry mustard
1 tsp green onion tops, minced
1 raw egg
1/4 c heavy cream
8 slices whole wheat bread or English muffins
1 c Cheddar cheese, grated
paprika

Rinse shrimp with cold water, pat dry with paper towel. Set aside.

Separate hard-boiled egg yolks from whites, set whites aside.

In a small bowl; mash egg yolks; blend in salt pepper, mustard and green onion. Stir in raw egg yolk and cream. Chop hard-boiled egg whites. Add egg whites and shrimp to egg yolk mixture. Toast bread on one side only (brown on a griddle). Spread sandwich mixture on untoasted side of bread. Top with grated cheese and sprinkle with paprika.

Bake at 375º for 10-12 minutes, or until cheese is lightly brown. Serve open faced.

I use English muffins; spread with sandwich mixture and broil 5 minutes or until egg is cooked and cheese is melted.
