Ingredients: 30-36 Ritz crackers, crushed ¼ cup chopped parsley 2 tbsp. minced garlic 2 tbsp. fresh lemon juice (half a lemon) ½ cup butter ¼ lb. chopped scallops 12-14 colossal shrimp

Directions: |
Directions:1. Butterfly and devein each uncooked shrimp. Set aside. 2. Melt butter in saucepan. Add garlic and sauté. 3. Add chopped scallops and cook for one minute. 4. Remove from heat and add all remaining ingredients. Mix well. Mixture should be moist enough to mold when pinched. 5. Stuff shrimp with a rounded spoonful of above mixture. 6. Place stuffed shrimp in a buttered casserole. 7. Bake at 350º for 12-15 minutes. |

Baked Scallops |

Ingredients: |
Ingredients: 1 lb. scallops 2 tsp. flour 1 clove of garlic, finely chopped 2 tbsp. melted butter ½ fresh lemon, squeezed (optional) 4 tbsp. bread crumbs salt & pepper

Directions: |
Directions:1. Preheat oven to 350º. Spray a shallow baking dish with cooking spray. 2. Place scallops in baking dish. Pour lemon juice over scallops. 3. Dust scallops with flour. Coat with melted butter and top with bread crumbs. 4. Sprinkle with chopped garlic. Season to taste. 5. Bake 10 minutes.
