1 lb. pork tenderloin or shoulder
2 T honey
3 T light soy sauce
1 tsp dark soy sauce
1 T sherry
1 clove garlic, mashed

Directions:
Trim meat and make 2”x6” cuts like strips. Combine remaining ingredients and use to marinate pork at least 2 hours.

Skewer pork with steel skewers and hang under top oven rack over shallow roasting pan with a few inches of water.

Preheat over to 425 degrees for 10 minutes. Roast at temperature for 20 minutes. Use Bastet to coat with drippings every 5 minutes. Reduce beat to 325 degrees and roast for 5 more minutes.

Slice each strip diagonally against the grain into 1/4” thick pieces.
