3 slightly beaten eggs
2 cups milk
1-1/2 c. cooked rice
1/2 c. sugar
1/2 c. raisins (optional)
1 t. vanilla
1/2 t. salt
ground cinnamon

Directions:
Directions:
IN bowl,combine eggs, milk, rice, sugar, raisins, vanilla, and salt. Mix well. Bake in 10 x 6 x 2 inch baking dish at 325 for 25 minutes, Stir. Sprinkle w/cinnamon. Continue baking until knife inserted halfway in center comes out clean which could take 20 minutes longer. Serve warm or chilled with light cream, if desired.
