In a medium bowl, beat 3 eggs and 3/4 cup milk until well blended. Add 3/4 cup all-purpose flour and 1/2 tsp salt; stir until barely blended (batter should be slightly lumpy).

Peel, core and cut 2 Granny Smith apples into 1/4 inch slices; toss in a bowl with 3 tablespoons sugar, 2 tablespoons lemon juice and 1/4 tsp cinnamon.

Melt 6 tablespoons of butter in an ovenproof heavy skillet (cast iron or non-stick) over medium high heat. Add apple mixture and sauce 4 minutes, until slightly softened. Spread out apple mixture evenly in pan, pour the batter over the apple.

Bake 20 minutes, or until pancake is golden brown and puffed. Sprinkle with juice of half a lemon and dust with powdered sugar or drizzle with a cinnamon glaze.

Serve immediately.
