3 c chicken stock
1 c dried porcini or 10 oz crimini or baby Bellas mushrooms sliced
2 1 /2 lbs chicken breasts (boneless and skinless) fed 6 adults 2 children
Flour
Salt and pepper
Sage (fresh chopped or ground)
4 cloves garlic Chopped
EVOO
5 tbsp butter
1 or 2 shallots thinly sliced
2 tbsp fresh thyme
1-2 cups Marsala
1/2 cup cream (optional)



Directions:
Directions:
If using dried porcini - bring broth and porcini to a boil and simmer 10 minutes
Season chicken with salt and pepper, dredge in flour mixed with garlic powder, sage and nutmeg
Chop the porcini, reserve broth

EVOO heat in pan, add 2 tbsp butter
Cook chick and plate
Add more oil and butter if needed and cook shallots, add garlic and thyme about 2 minutes
Add the mushrooms and cook 5 - 10 minutes
Add the Marsala until it reduces by half
Add the porcini or chicken broth
Stir in cream and porcini. Cook 5 minutes
Add chicken to sauce
