2 bone-in breasts (split)
4-6 chicken thighs
8 -10 oz mushrooms (any)
1 large onion
1 - 2 red peppers
Black or green olives (optional)
Capers (optional)
1 small potato per piece of chicken (optional)
1 can crushed tomatoes
1 cup chicken broth
White wine
Salt, pepper
Thyme
Crushed red pepper or Calabrian chili paste
Butter
EVOO

Directions:
Directions:
Prepare all vegetables
Dry chicken and season with salt and pepper
Heat EVOO and cook in batches about 4 minutes per side
Remove from pan and add a pat or two of butter
Add sliced onions and cook until translucent, add some rosemary
Add mushrooms and season with thyme
When cooked, season with salt and pepper
Add sliced red peppers and cook a few minutes
Add red pepper flakes or chili paste
Deglaze with white wine
Add chicken broth
Add tomatoes and taste for seasoning. Cook for about 5 minutes
Add chicken back into pan and cook 15 minutes before adding optional olives and capers. Cook another 5 minutes

If adding potatoes, cube and boil about 15 minutes. Add at the same time tomatoes are added
