1 1/2 lb chicken cut into 1 inch cubes
8 slices bacon, chopped
2- 12 oz pkgs cauliflower crumbles or rice
3 cloves garlic, crushed
1/2 t salt
3/4 t black pepper, divided
2 c frozen green peas, thawed or fresh asparagus
1/3 c heavy cream
1 c Parmesan cheese

Cook chicken and bacon over medium high heat until chicken is done and bacon is crisp. Transfer to plate

Saute cauliflower in pan over high heat 7-10 min until browned and tender.
Add garlic, salt, and 1/4 t pepper, cook 1 min

Reduce heat to medium low. Return chicken mixture to skillet.
Stir in peas, cream, and 3/4 c cheese. Cook 2-4 min. until heated.

Sprinkle with 1/4 c cheese and pepper.
