3 green onions
1 red bell pepper
1/2 stick butter
1 lb raw shrimp, small (peeled and cleaned)
2 crushed garlic cloves
8 oz cream cheese
3 T sour cream (or plain Greek yogurt)
1 t creole seasoning
1 t fresh parsley, chopped
1 t lemon juice
salt to taste
Vegetables for dipping

1. Chop the onion into small rings, Reserve green part for later.
2. Chop red bell pepper.
3. Melt butter in saucepan over medium heat.
4. Add vegetables to the butter, stir to coat and cook for 4-5 min. until softened.
5. If shrimp are too big, cut into small chunks.
6. Add shrimp and garlic to saucepan, stir well and cook for 2 min until pink
7. Stir in cream cheese, sour cream, and creole seasoning.
8. Bring to a simmer and then cook for 2 min until thick and creamy
9. Stir in lemon juice and parsley, add salt and pepper if needed.
10. Garnish with onion greens and parsley.
