2 tbsp instant coffee granules
2 tbsp granulated sugar
2 tbsp boiling water
1 tsp vanilla
pinch of cinnamon - optional

Directions:
Directions:
Put coffee granules, sugar and cinnamon in a medium bowl. Add hot water and whisk vigorously for 1-2 minutes. Splash in a drop of vanilla and whisk some more. Creates a strong sweet froth

When mixing by hand it is a little looser. Electric mixer makes for a stiffer product. I have doubled it and made it using a mixer with great success. Keep remaining covered tightly in fridge. Topping may separate slightly after a few days, but can be whipped back together easily with a whisk.

This is based on the popular social media recipe during the 2020 pandemic. Originally it was billed as a topping for hot or iced milk, but we like it on top of hot coffee with a little half and half stirred in.
