1/3 c water
1 c dried apricots, chopped
1 c rolled oats or granola
1/2 c oat bran
1/2 c brown sugar
1/2 c walnuts or pecans, chopped
1/2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
2 egg whites
3 T olive oil

Directions:

Preheat oven to 350º. Lightly grease 2 baking sheets.

In a small pan, bring water to a boil. Place apricots in a medium bowl, add boiling water and soak for 10 minutes, then cool.

In a large bowl; combine oats, flour, oat bran, brown sugar, nuts, baking powder and mix well. Beat egg whites until stiff peaks form. Fold into cooled, cooked apricot mixture. Add oil, then mix into dry ingredients .

Drop by spoonfuls onto the prepared cookie sheets, bake for 12-15 minutes or until light brown. Cool on pan for 5 minutes
