1/2 c (1 stick) butter, softened
1 c sugar
1 egg
1 tsp vanilla
1 c flour
1 c old fashion oats, not quick cook
3/4 tsp cinnamon

Apple filling:
8 large Granny Smith apple, peeled, cored and sliced
3/4 c sugar
1 1/2 T cornstarch
1 1/2 tsp cinnamon
1/4 tsp allspice

Directions:

Preheat oven to 350º.

Using an electric mixer on medium. speed, cream together butter and sugar, till creamy. Blend in egg and vanilla. Stir in flour, oats, and cinnamon thoroughly.

In a separate bowl; combine sliced apples, sugar, cornstarch, cinnamon and allspice. Mix well and pour into a 3 quart baking dish, spread out evenly. Spoon topping over the apple filling, evenly.

Bake 1 hour or until apples are fork tender and topping is golden brown.

I have also omitted the allspice and added a half teaspoon of Pumpkin Pie Spice to apples.
