Lemon Cookies

2 1/4 c. flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 c. sugar
1 c. unsalted butter softened
1 egg
2 tbsp. lemon zest
1 1/2 tbsp. lemon juice
1 tsp. vanilla

Lemon Icing

1 1/2 c. powdered sugar
1 1/2 tbsp. lemon juice
1 1/2 tbsp. milk
2 tbsp. lemon zest

Preheat oven to 350º
Cover baking sheets with parchment paper. Whisk flour, baking powder, baking soda, and salt, set aside. Cream butter and sugar together. Add egg, lemon zest, lemon juice and vanilla, mix together.
Add flour mixture to the butter mixture.
Place dough on cookies sheets and bake for 10-12 minutes or until lightly brown around edges.

Icing

Stir together powdered sugar, lemon juice, milk, and lemon zest. Ice when cookies are cool.
