12 oz. orecchiette pasta
1 (10oz.) package frozen peas
Zest of one lemon
2 tablespoons olive oil
4 leeks, white and light green parts, sliced
Salt and pepper to taste
3/4 cup heavy cream
2 tablespoons fresh tarragon, chopped
1/4 cup Parmesan cheese

Directions:
Directions:
Cook pasta according to directions, adding peas during last 2 minutes of cooking. Drain. Heat oil in large skillet over medium heat. Add leeks, salt and pepper and stirring constantly until tender, 6 to 8 minutes. Add the shrimp and cook until pink, 4 to 5 minutes. Add cream, lemon zest, and tarragon. Simmer 4 to 5 minutes. For a lighter sauce add 1/2 cup chicken broth. Add pasta and peas. Serve with shredded Parmesan cheese. Enjoy!
