2 cup dates
2 cup walnuts
5 oz. canned ginger

4 egg whites
2 cup coconut
1/2 cup white sugar

Additional: 1/2 cup finely chopped walnuts

Directions:
Directions:
In a food processor: combine:
dates, walnuts and ginger. Chop finely.

Beat egg whites. Slowly add the sugar while beating.
Stir in coconut.
Lightly fold in date mixture.

Bake in 8" X 16" greased pan for 30 minutes at 250F
Cool. Cut into squares and roll into balls.
Roll balls in finely chopped nuts.
Store in tight tin.

Nana use to make this recipe way back when I first started visiting the Dickinson home (1972). Today, I reduce the sugar (Nana used 1 cups in the batter and rolled the balls in the other cup of sugar.)
