2 large eggplants
1 tsp salt
½ cup olive oil
3 Tbsp balsamic vinegar
1 large clove garlic
pepper
1½ cups marinera divided
mozzarella cheese torn in small chunks
4 tbsp parmesan
4 tsp pesto sauce

Directions:
Directions:
Slice the eggplant into ½ inch rounds. Toss the eggplant with the salt in large colander
and allow to sit and drain in sink for 30 min.

Preheat the broiler. In a large bowl whisk together the olive oil, balsamic vinegar garlic and pepper. Without rinsing the eggplant, toss with vinaigrette and let marinate for 15 min. Arrange slices in single layer on a large nonstick baking sheet. Broil 12 min. Glip and broil another 12 minutes.

Heat oven to 425. Place 2 tbsp of marinara sauce and top with eggplant. Top with ¼ cup Marinara sauce. Then with Mozzarella and finally the parmesan.
Bake 30 minutes. Let rest for 10 minutes. Drizzle each with 1 tsp of pest sauce.
