Crepes
1 cup flour
¼ tsp salt
3 eggs
1¼ cups milk
3 T butter, melted

Whisk together in blender and refrigerate for 1 hour.
Pour scant amount in hot skillet, swish to cover pan. Cook 1 minute. Flip. Cook 30 seconds.

Variations
Buckwheat: Replace half of the flour with buckwheat flour and add 3 T chives. Inside - cream cheese, smoked salmon, lemon rind and salad greens.

Chocolate: Replace ⅓ cup of the flour with ¼ cup cocoa powder and 3 T sugar.

Coconut: Stir in 2 T brown sugar and ½ tsp coconut extract
