1 pound butter
1 cup berry sugar
4 cups flour (Bulk Barn 1-1 works well)
2 tbsp ground rice

Directions:
Directions:
Cream butter until it is like whipping cream. Add sugar , a couple of tablespoons at a time.
On low speed, add as much of the flour as you can.
Put the rest of the flour on a board and kneed the dough until all the flour is used.
Divide into 3 and pat in 8" layer cake pans. Prick with fork on top.
Cook in 300 F oven for 1 hour .
Do not let it get brown.

Grandma Stanier would make Scotch Shortbread every Christmas and give each of us kids our own cake. It was so special to have our own treat to enjoy when we wanted.
