2 tablespoons salted butter, softened and room temperature
1 garlic clove, finely chopped
1˝ cups heavy cream, room temperature
1 large egg yolk, room temperature
1 cup grated Parmigiano-Reggiano cheese
1-pound fettuccine
Salt and freshly ground black pepper, to taste

1). Bring 6-quarts of generously salted water to a boil, about a scant tablespoon of salt to 1-quart of water. While the water heats, melt the butter in a large, deep skillet over medium-high heat. Add the garlic and sauté until fragrant and sizzling, being careful not to burn the garlic, about 1 minute. Reduce the heat to medium-low. Whisk the cream with the egg yolk in a bowl until blended. Slowly pour into the garlic and butter mixture, whisking constantly. Whisk until hot but not boiling. Keep warm over low heat.

2). Meanwhile, cook the pasta a degree or so firmer than al dente. Drain in a colander, shaking out any excess water, reserving a little cooking water. Pour the hot pasta into the cream mixture and toss to coat over low heat. Add the cheese and keep tossing gently until the cream is mostly absorbed. Season with salt and pepper. If the sauce is too thick, toss with a little pasta water. Serve in warm bowls.

This recipe came to the New York Times in a 2004 article about Elaine Kaufman, the founder and proprietress of the famed New York restaurant and celebrity hot spot that bore her name where this dish was served. There is nothing complicated about it and it’s delicious!
