1 lb. boneless, skinless chicken breast, cut into palm size pieces
Butter or regular Pam spray
8 oz (1 cup) catsup
12 ounces diet cola (diet pepsi or coke)

Directions:
Directions:
Heat a skillet (I use non-stick) and spray with Pam. Once skillet is hot, place chicken in skillet. Salt and pepper to taste. Brown on both sides (3-4 minutes per side). Combine catsup and cola. Pour over browned chicken. Cover skillet and turn heat to low. Simmer for 40-45 minutes. Remove cover and turn heat to medium-high. Cook until sauce is thickened.
