1 1/2 cups oil
2 cups sugar
4 eggs
2 1/2 cups flour
1 teaspoon soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
2 cups grated carrots
1 cup crushed pineapple
2 teaspoons vanilla
1 cup walnuts (optional)

Directions:
Directions:
Mix eggs and sugar, add oil, then dry ingredients. Beat well. Stir in pineapple, carrots, vanilla and nuts. Bake at 350 degrees for 50 - 55 minutes in a large greased and floured cake pan. Cool cake before frosting.

Frosting
1/2 cup softened butter
8 ounces cream cheese (softened)
1 teaspoon vanilla
3 cups powdered sugar
Milk if too stiff
Mix well and spread on cooled cake. Keep in refrigerator.
