4 Tablespoons of a good white wine 1 clove garlic chopped 1 tbsp olive oil 18 littleneck clams 1 tsp cornstarch 1 tbsp water juice of 1/2 lemon salt/pepper 3/4 cup Asiago cheese 1/2 cup grated Parmesan cheese 2 tbsp chopped parsley

Turn on broiler In a large pot bring wine garlic olive oil to a boil Add clams and cover Cook 5 min until opened. Remove clams from liquid and set aside Stir in water and cornstarch whisk and add lemon juice season with salt pepper Remove clams from shells add spoonful of liquid to each clam and place on baking sheet . Top with cheese's and remaining liquid. Broil 5 min until cheese bubbles Sprinkle with parley

A Pasta with a butter garlic sauce and white wine is great with this or use as appetizer. In Chile they use razor clams called Machas a la Parmigiana
