Directions:Choose up to two meats and cheeses, especially using leftovers from your fridge. Enhance with one or two cooked or leftover, fresh or frozen veggies or whatever addition would make your gang happy. Use enough of the meat, cheese and veggies to cover the bottom of the pie shell. Do not overdo it here or you won't have room for the eggs. Preheat oven to 350 In the pie shell, make a thin, even layer of up to 3 filling items. Season if desired. In a bowl, whisk eggs and 1/2 and 1/2 to combine. Open oven door, pull out rack, place pie shell on the center of the rack. Gently spoon or pour over fillings in pie shell, being careful not to overfill the pie shell because the eggs will expand during cooking Gently push rack back into oven and bake pie until eggs are set, about 45 minutes Allow pie to rest 10 minutes before slicing. Garnish creatively with things like black pepper, sour cream, parmesan cheese, fresh herbs, olives, salsa, onion dip or nacho cheese. |
