1 lemon cake mix
1 small package strawberry gelatin
1 cup of water
1 cup of prepared lemonade
1 container whipped topping
Fresh slices strawberries

Directions:
Directions:
Prepare cake mix according to directions, and allow cake to cool.
Poke cake all over with a skewer or large fork.
Prepare strawberry gelatin by bringing cup of water to a boil, adding gelatin mix,
allowing to disolve, and then remove from heat.
Stir in lemonade, and then carefully pour mixture over the poked cake. Cover and chill to set gelatin, at least 4 hours.
When ready to serve, slice strawberries and set on paper towels to remove extra moisture.
Frost cake with whipped topping and arrange strawberries on top.

This is a refreshing twist on an old favorite. Its simple, and kids love it! We often do a variation of this for 4th of July and top with strawberries and blueberries, having the children help arrange fruit like an American flag on top of the cake.

We have also made this with a chocolate cake mix and raspberry gelatin, with fresh raspberries, and it takes poke cake to a new level.
