"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
1 loaf frozen bread dough
1 lb ground beef or sausage
1 small onion, diced
garlic salt
black pepper
1/2 cup shredded or 12 slices hard cheese like cheddar or swiss

Directions:
Directions:
Thaw bread dough in fridge overnight.
Brown ground meat and onion, seasoning with garlic salt and black pepper.
When dough is completely thawed, grease counter or large work surface with light coating of butter or cooking spray.
Place dough on greased surface, and cut into 12 equal pieces.
Spread each piece out flat, working dough to at least twice original width.
Put one heaping tablespoon of meat mixture and small slice or sprinkle of cheese on each dough piece.
Draw up the edges of each piece of dough, pinching together to seal meat inside and forming a small ball.
Do not overfill. Make sure there are no holes in the balls. Place each ball seam side down on greased baking sheet.
Allow to rise for 30 minutes. Bake in preheated oven at 320 for 20 to 30 minutes, until bread is baked and golden brown.
Remove from pan, and rub the top of each ball gently with butter. Serve immediately, or allow to cool.
Cooled burgers can be chilled in bags or a sealed container.
