1/2 cup shortening
2 cups granulated sugar
1 egg
1-1/2 cups unsweetened applesauce (Mom always used homemade applesauce)
2 tsp baking soda
1/2 cup boiling water
2-1/2 cups flour
1/2 tsp cinnamon
1/2 tsp cloves
1/2 tsp allspice
1 cup raisins
1/2 cup chopped nuts

Directions:

Preheat oven to 350º

Cream shortening and sugar together. Add egg and applesauce, mix well. Mix the baking soda into the boiling water, add to above mixture. In a separate bowl combine flour, and spices. Add to above mixture, beat just to combine. Stir in raisins and nuts. Pour into a lightly greased 9" x 13" baking pan. Bake for 1 hour.

Serve with whipped cream or vanilla ice cream, if desired.

My mother-in-law always had fresh baked cookies or a cake on the kitchen counter. Dad would always have one or the other with his lunch. She made applesauce cake often, as she always had homemade applesauce on hand since they lived on and worked an apple orchard.
