½ c. diced fresh tomatoes or quartered cherry tomatoes
½ c. matchstick carrots
⅓ c. green onions, sliced thin (optional)
¼ c. balsamic vinaigrette dressing
1 T. basil herb paste or prepared pesto
¼ c. crumbled Gorgonzola or Blue cheese
2 medium zucchini

Directions:
Directions:
Combine all ingredients except zucchini in a salad bowl.
Cut zucchini into 3 to 4 inch long sections; then, using a vegetable peeler, cut very thin lengthwise strips into the salad bowl. (Discard the center core if there are seeds).
Toss to coat the zucchini and chill until ready to serve.

I prefer to use white balsamic so as not to stain the white flesh of the zucchini
