John's Limoncello Recipe

1 bottle of Everclear
14 medium lemons
4 1/3 cups water
3 1/3 cups sugar
microplane grater
bottles for final product
cheesecloth - optional

Directions:
Directions:
Wash all lemons and trim stem ends if needed.
Using microplane grater, grate zest only off all the lemons.
Soak the lemon zest in the Everclear for at least a week.
Pour the infused Everclear over a cheesecloth laid in a strainer over a bowl to remove the grated zest.
In a pan, mix sugar and water and bring to a boil, and then allow to cool completely.
Mix syrup with Everclear, pour into bottles.
