6 eggs
2 cups milk
1 tsp salt
1 tsp dry mustard
1 lb breakfast sausage or bacon
1 cup grated cheese
4 slices stale white bread, cubed

Directions:
Directions:
Cook sausage or bacon.

Mix eggs, milk, salt and mustard.

Spray a 9x13 pan with cooking spray.

Layer bread cubes, sausage or bacon and cheese in the pan, then pour egg mix over all.

Cover tightly with foil and refrigerate overnight - THIS PART IS NOT OPTIONAL.

The next day, preheat oven to 350 degrees.

Bake covered for 45 minutes or until eggs are set. Uncover the last 10 minutes or so to allow to brown if you like.

You must allow it to stand overnight or it does not work.

This egg casserole stands up really well, almost like a quiche.

After you get the hang of this, you can add other ingredients - grated hash brown potatoes, diced green peppers, diced onions, ham, different flavors of cheese.

You can also use stale French or Italian bread, but not whole wheat bread.

This is great to make the night before if you have company, and then pour, bake and serve in the morning.

This was served for brunch at nearly every family event in my memory.
