¼ c. silvered almonds
2 TBSP sugar
4-6 c. of greens (spinach, romaine, spring mix, etc)
1 c. chopped celery
2 green onions including tops, chopped
1 can of mandarin oranges, drained

Dressing:
½ tsp salt
1 TBSP sugar
2 TBSP vinegar (I like cider vinegar)
¼ c. oil
1 TBSP snipped fresh parsley
dash pepper
dashTabasco

Directions:
Directions:
In heavy pan, place the almonds and sugar. Over low heat melt sugar until nuts are coated golden brown. Stir constantly. Set aside. When cool, break into pieces. Combine all dressing ingredients and mix well. Put greens and veggies in large salad bowl, add sugared almonds and toss with dressing. Serve immediately.

Unlike most of the friends I grew up with, the Gingrich family was from California and they were into healthy eating long before it was popular in the "meat and potatoes" Midwest. In 1985 I remember visiting them on their farm in Clyde and having this delicious salad for lunch. I asked for the recipe then and have made in many, many times since over the years.
