Hobbit's Chicken Recipe

Whole Chicken - 3-5 lbs.
Lemon - 1-2
Roasted Garlic - 15 cloves (can use 1 whole head if you don't have roasted garlic)
Butter - 1 stick melted
Rosemary - 2 sprigs
Thyme - 2 Sprigs
Sage - 2 Sprigs
Pearl Onions - 4-5 whole skin off
Potatoes - 5-8 whole (small works best)
Salt & Pepper to taste
Roasting Pan ( I used a cast iron skillet, I recommend it for the sauce at the end)

Directions:

Set your oven to 425 degree's Fahrenheit.
Place your chicken in your skillet or pan.
Cut lemons in half and place on opposite sides of the chicken (do the same for whole heads of garlic if you choose to use those).
Place potatoes and onions around the bottom of the chicken.
Take your rosemary, sage, and thyme; remove the stems and dice to an even size. Place on top of the chicken. Do the same with your salt and pepper.
Pour your melted butter over the chicken.
Place in oven and cook for 60 minutes.
Remove from oven and take chicken off of skillet/pan and place on cutting board. Tent foil over it and let it rest for at least 10 minutes.
While the chicken is resting, put your skillet/pan on a low to medium heat stove and let the sauce reduce, stirring occasionally.

I like to serve this with rice and a veggie on the side.

(Note on the name: I'm a big fan of The Lord of the Rings. When I found this recipe on social media the creator had music from the movie's soundtrack on it so I decided to pay homage to that with the name. No Hobbits were harmed in the making of this recipe.)
